Full of fall flavors, this hearty rice bowl offers a new way to serve JENNIE-O® Slow Roasted Turkey Barbacoa.

INGREDIENTS

Ingredients
  1. JENNIE-O® Slow Roasted Turkey Barbacoa (122185)
  2. Annatto rice
  3. Cranberry relish with jalapeño
  4. Cornbread, toasted and crumbled
  1. Butternut squash, roasted and diced
  2. Pepitas, toasted
  3. Green onions, sliced

STEP ONE

Heat JENNIE-O® Slow Roasted Turkey Barbacoa, reserve warm, drain liquid and use for making yellow rice.

Make yellow rice with reserved barbacoa liquid and reserve.

Layering ingredients into a bowl

STEP THREE

Assemble the bowls starting with rice, topping with barbacoa, jalapeño cranberry relish, cornbread crumbles, roasted squash, pumpkin seeds and green onions.
