Turkey Breast Roast Schnitzel with Caper Mustard Mayonnaise and Buttered Noodles

Turkey Schnitzel

An Austrian classic made with JENNIE-O® Turkey Breast is served with buttered noodles and a lemony caper mustard sauce.

INGREDIENTS

Turkey Schnitzel ingredients
  1. JENNIE-O® Petite Turkey Breast Roast (218804)
  2. Panko bread crumbs
  3. Seasoned all purpose flour
  4. Beaten eggs
  5. Canola oil
  1. Chopped capers
  2. Coarse ground mustard
  3. Parsley
  4. Lemon juice
  5. Mayonnaise
  6. Cooked egg noodles

STEP ONE

Make caper and mustard mayonnaise by combining capers, ground mustard, lemon juice, salt and pepper into a bowl.

STEP TWO

Peel skin and silver skin off of turkey breast. Slice turkey into ¾” pieces and cover with plastic wrap. Pound thin with mallet.

STEP THREE

Season turkey with salt and pepper. Bread turkey by dredging pieces in flour and then into beaten eggs.

STEP FOUR

Dredge in panko breadcrumbs.

STEP FIVE

Heat canola oil in saute pan and fry schnitzel until lightly browned on both sides and an internal temperature of 165°F is reached.

STEP SIX

Drain on paper towels. Serve on top of buttered noodles and top with caper mustard mayonnaise and chopped parsley.
