Flank Steak with Heirloom Tomatoes and Corn and Mango Relish

This build takes advantage of fresh, seasonal products to highlight the HORMEL® FIRE BRAISED Beef Flank Steak.

INGREDIENTS

Ingredients
  1. HORMEL® FIRE BRAISED Beef Flank Steak (84117)
  2. Fresh corn, peeled and kernels cut from the cob
  3. Jalapeño, diced small
  4. Heirloom tomatoes, sliced
  1. Sugar
  2. Vinegar
  3. Cilantro, chopped
  4. Fresh mango, peeled and diced small

STEP ONE

Sauté the corn in a small amount of oil, add jalapeño. When tender, add sugar and let lightly caramelize in the pan. Deglaze with the vinegar and cook until liquid is reduced.

STEP TWO

Remove from the heat and stir in the cilantro and mango pieces. Let cool.

STEP THREE

Char the flank steak over medium heat using charbroiler or live fire. Cook a few minutes per side, just enough to get it warm.

Slicing tomatoes

STEP FOUR

While the steak is cooking, slice heirloom tomatoes and line your service plate. Season lightly with salt and pepper.

STEP FIVE

Remove the flank steak and let rest 5-10 minutes. When ready, slice thinly on a bias and place on the tomatoes.

STEP SIX

Garnish platter with corn and mango relish and additional cilantro leaves. Finish with salt and a drizzle of olive oil.
