Asparagus and Herbed Cheese Stuffed Flank Steak Rolls on Creamy Mashed Potatoes

With a few simple ingredients, elevate HORMEL® FIRE BRAISED Beef Flank Steak in an entrée sure to impress your customers.

INGREDIENTS

Ingredients
  1. HORMEL® FIRE BRAISED Beef Flank Steak (84117)
  2. Asparagus
  3. Herbed cream cheese
  4. Breadcrumbs
  1. Balsamic reduction
  2. Whipped mashed potatoes
  3. Avocado salad (Avocado, ½ slices of mini cucumbers (skin-on), finely diced red onion, cilantro)

STEP ONE

Toss asparagus with olive oil and salt and pepper.

Roast in 350°F oven until charred and slightly softened, reserve.

STEP TWO

Combine herbed cream cheese and breadcrumbs to make a filling, reserve.

STEP THREE

Slice center cuts of the flank steak about ¼” thick. Lay flank steaks flat on cutting board, fill with small amount of cheese stuffing.

STEP FOUR

Add roasted asparagus on top of cheese mixture.

STEP FIVE

Wrap steak around the filling and secure with toothpicks.

STEP SIX

When ready, char the stuffed flank steak rolls over a char broiler until you see sear marks, but still medium rare. Let steaks rest.

STEP SEVEN

Remove toothpicks. Serve 2 rolls on a bed of mashed potato and a drizzle of balsamic glaze. Garnish with fresh herbs and avocado salad.
